Zucchini Pizza Crust

  • 8 cups of shredded zucchini

  • 1/2 shredded Parmesan cheese

  • 1/2 shredded cheddar cheese

  • 2/3 cup flour

  • 2 minced cloves of garlic

  • 4t Italian seasoning

  • 2 eggs, beaten

  • 1T salt


  1. Preheat oven to 450F with a pizza stone or sheet pan pre baking in it.

  2. In a large bowl, toss the zucchini with 1 tablespoon of salt. Squeeze the extra moisture out of the zucchini by wrapping it up in a towel and wringing it out the extra water.

  3. Mix zucchini, eggs, cheese, Italian seasoning, and flour.

  4. Form zucchini mixture into a circle onto a piece of parchment paper on a sheet pan.

  5. Transfer the crust onto the heated pizza stone or sheet pan in the oven. Bake until the crust starts to brown.

  6. Once the zucchini crust starts to brown, top your pizza crust with sauce and toppings.

  7. Place pizza back in the oven and bake until your cheese is bubbly and melted.

  8. Enjoy!
