Zucchini Fritters



 

Yield:10 Fritters




Ingredients

  • 4 medium zucchini, Shredded

  • 1 large Red Pepper, Diced

  • 1 T of Red Pepper Flakes

  • 1 t of Onion Powder

  • 1/2 T of Garlic Powder

  • 1 T of McCormick's Vegetable Seasoning

  • 3/4 cup of all-purpose flour

  • 2 large eggs (beaten)

  • 1/2 cup shredded Parmesan

  • Olive oil


Directions

  1. Shred your zucchini. Salt and let it sit about ten minutes to draw out the moisture from the zucchini. Drain and wring with a thin cloth.

  2. Cut your red pepper in a medium dice. You could mince the pepper if you desire.

  3. In a large bowl combine, zucchini, pepper, cheese, eggs, flour, vegetable seasoning, onion powder, garlic powder, and red pepper flakes.

  4. Add 4 T of olive oil to a large nonstick skillet. Get your pan to a nice sizzle heat. Use your 1/4 measure to scoop batter and place in the skillet.

  5. Press down on the fritter and cook 3-4 minutes on each side or until see a nice brown color on each fritter. Don't over crowd your skillet.

  6. Serve your fritters warm with your favorite brand of marinara sauce.
