Zucchini Au Gratin



Yield: 6-8 Servings


Ingredients

  • 3 Small-medium sliced zucchini

  • 1 Small Yellow Pepper, small dice

  • 1 Small Orange Pepper, small dice

  • 1 Small Onion, sliced thinly

  • 2 T of Butter

  • 3 Cloves of Garlic

  • 1/2 cup of Parmesan

  • 3/4 Cup of Cream

  • 4 oz of Shredded Gouda

  • 4 oz of Cheddar

  • 1 T McCormick Vegetable Seasoning



Directions

  1. Preheat oven to 450 degrees

  2. Slice your vegetables. Place your vegetables in a greased casserole dish and make sure vegetables are evenly placed. Sprinkle vegetable seasoning on top.

  3. Melt butter in a medium saucepan under medium heat. Add onion and garlic and cook until translucent and brown edges.

  4. Add cream and parmesan cheese and let simmer for 3-4 minutes.

  5. Pour sauce over your zucchini and peppers.

  6. Top with shredded cheeses.

  7. Cover and cook for 35 minutes. Remove cover and cook additional for 5-10 minutes.

  8. Let sit for 10 minutes and serve.

  9. Enjoy!
