Yield: 6-8 Servings
3 Small-medium sliced zucchini
1 Small Yellow Pepper, small dice
1 Small Orange Pepper, small dice
1 Small Onion, sliced thinly
2 T of Butter
3 Cloves of Garlic
1/2 cup of Parmesan
3/4 Cup of Cream
4 oz of Shredded Gouda
4 oz of Cheddar
1 T McCormick Vegetable Seasoning
Preheat oven to 450 degrees
Slice your vegetables. Place your vegetables in a greased casserole dish and make sure vegetables are evenly placed. Sprinkle vegetable seasoning on top.
Melt butter in a medium saucepan under medium heat. Add onion and garlic and cook until translucent and brown edges.
Add cream and parmesan cheese and let simmer for 3-4 minutes.
Pour sauce over your zucchini and peppers.
Top with shredded cheeses.
Cover and cook for 35 minutes. Remove cover and cook additional for 5-10 minutes.
Let sit for 10 minutes and serve.
