Tuscan Salmon




Yield: 4 Servings


Ingredients

  • 4 Pieces of Salmon

  • salt & pepper

  • Tony Creole Seasoning

  • 1 tablespoon Grapeseed oil

  • 2 tablespoons unsalted butter

  • 4 garlic cloves, minced

  • 3/4 cup diced sweet onion

  • 1/3 cup dry white wine

  • 1t red pepper flakes

  • 2 cups cherry tomatoes

  • 1/4 cup of Parmesan cheese.

  • 2 cups baby spinach

  • 1 3/4 cup of Cream

  • 1 tablespoon lemon juice

  • 3T fresh basil, minced

  • 1T fresh Thyme, minced


Directions

  1. Season both sides of salmon with Tony Creole's Seasoning

  2. Heat a large skillet to medium high heat. Add oil and then salmon. Sear salmon for 4-5 minutes per side. Remove from pan and set aside.

  3. Add butter and garlic to the pan an sauté for 40 seconds. Add onions and sauté for 3 minutes.

  4. Add your white wine and deglaze the pan. Then season with salt and peppers.

  5. Add in cherry tomatoes and cook for 4-5 minutes.

  6. Add in spinach and sauté until wilted down.

  7. Pour in the cream. Stir and simmer for 3-4 minutes. Add parmesan cheese.

  8. Then add lemon juice and fresh herbs. Stir to combine.

  9. Place the salmon back in the pan and simmer for 5-8 minutes.

  10. Enjoy!
