Strawberry Plum Bellini

Yield: 4


  • 1 cup of water

  • 1 cup of sugar

  • 2 cups of Strawberries sliced

  • 4 small plums, sliced

  • Bottle of Prosecco or TÖST


Simple Syrup

  1. In medium saucepan, combine sugar and water over medium heat.

  2. Whisk until the sugar dissolves and it begins to boil. Reduce to simmer for 2 minutes and sit at room temperature. Tip: do this ahead of time for the simple syrup can be chilled. Any extra can be used for any drink that needs a little sugar.


  1. Add your fruit and blend until pureed.

  2. Add simple syrup a a little at a time and taste to make sure it is sweet enough for you.

  3. Pour fruit puree in the champagne flute and top it off with prosecco and serve.

  4. Add mint for garnish.

  5. Enjoy!

Another way to serve is by using TÖST.

TÖST is a non-alcoholic sparkling beverage of white tea, white cranberry and ginger. It is refreshing and flavorful. You can enjoy without feeling guilty because they are low calorie.

For a non-alcoholic bellini all you need to do add some of the fruit puree in the champagne flute and top it off with a chilled bottle of TÖST.
