Yield: 5-6 servings
Ingredients
1 6-inch round of brie
1 sheet puff pastry
4 tablespoons melted butter
3/4 cup of Apricot Jam
1/4 cup of Carmalized Onions
3 slices of bacon, crumbled
Directions
Preheat the oven to 375°F.
Layout the puff pastry sheet flat on a silicone baking sheet. Trim the edges so they are round and you have an oval shape. Save the extra pieces of puff pastry dough.
Melt the butter and brush the butter inside the puff pastry.
Place the brie in the center of the puff pastry dough. Crosscut the top of the brie. Spread the jam on top of the brie. Add crumbled bacon.
Bring the edges of the puff pastry dough up over the top and seal well, using most of the remaining butter.
Use the extra dough to cut mini leaves to place on top of the puff pastry-wrapped brie. Brush the top with the additional butter. Bake 375°F oven for 20 minutes.
Remove and let sit for at least 15 minutes before serving.

Make it the center item in your Charcuterie board. I used sliced apples, french bread, prosciutto, grape, and tomatoes.
