3c all-purpose flour
2T poppy seeds
1T baking powder
1/2 t baking soda
1/2 t salt
1 1/2 c plain whole milk yogurt
2T fresh lemon juice,
2T grated lemon zest
2 large eggs
8t unsalted butter, melted
1 1/2 cups powdered sugar
3T fresh lemon juice
Preheat oven to 375 degrees F. Grease 12-cup muffin tin.
Mix flour, sugar, poppy seeds, baking powder, baking soda, and salt together in a large bowl.
In a separate bowl, mix milk, lemon zest, and eggs until smooth. Gently fold wet mixture into dry mixture until just combined. Add melted butter and combined.
Divide batter evenly among prepared muffin cups and bake for 20 to 25 minutes.
Remove muffins and place on a wire rack. Let cool completely. For the glaze mix powdered sugar and lemon juice until you reach the consistency you desire. Drizzle the glaze over the muffins.
