I love this recipe because it's a one pot recipe and it's on the table in less than an hour. It's simple but full of flavor. I also feel it is a recipe where you can add easily add a vegetable to complete the meal like broccoli or carrots.

Ingredients
Chicken
1 1/2 lbs boneless, skinless chicken breasts
2 T Olive oil
2 T Rotisserie Chicken Seasoning
1/2 T pepper
Potatoes
1 T of Olive oil
1 lb of New Potatoes
2 medium sweet potatoes cut (size should match the new potatoes)
1/2 cup of low sodium chicken stock
1/2 Lemon juiced lemon
2 cloves of Minced garlic
1 T of Salt
3/4 T Onion powder
3 T Herb de provence
2 T of Water
Directions
Heat your olive oil in a large skillet. Add your checked seasoned with the rotisserie and pepper seasoning. You want to cook 4 minutes on each side to get a nice color. Set aside.
Add remaining of oil to skillet. Add potatoes and saute 8-10 minutes or until the potatoes are slightly tender. Half way through add 2 T of water and cover. Potatoes will not be fully cooked.
Reduce heat to medium. Add chicken stock, lemon juice, and minced garlic. Add salt, onion powder, and Herb de provence. Add chicken and cover. Simmer for 5 to 7 minutes or until potatoes and chicken are cooked through.
