Yield: 4 -5 cups of sauce
2T Olive Oil
1 Small white onion, small diced.
6 Garlic cloves
6 oz Tomato Paste
28oz Crushed tomatoes
1/2 Cup of Vodka
1 Cup of heavy whipping cream
1/2 cup of parmesan cheese
2T Red Pepper Flakes
2 T Basil
Handful of Spinach
Place a medium saucepan over medium heat and sauté onion and garlic for about 3-4 minutes. Stir occasionally.
Add tomato paste and stir together. Cook for 2-3 minutes.
Add tomatoes and vodka. Simmer for 6-8 minutes.
Slowly stir in cream and simmer for 3-4 minutes
Add Cheese, spinach, basil, red pepper flakes, and simmer for an additional 4-5 minutes.
Top pasta with sauce and Enjoy!
Tip - You can absolutely freeze vodka sauce. I placed my sauce in a freezer-friendly container.
