Homemade Vodka Sauce




Yield: 4 -5 cups of sauce


Ingredients

  • 2T Olive Oil

  • 1 Small white onion, small diced.

  • 6 Garlic cloves

  • 6 oz Tomato Paste

  • 28oz Crushed tomatoes

  • 1/2 Cup of Vodka

  • 1 Cup of heavy whipping cream

  • 1/2 cup of parmesan cheese

  • 2T Red Pepper Flakes

  • 2 T Basil

  • Handful of Spinach


Directions

  1. Place a medium saucepan over medium heat and sauté onion and garlic for about 3-4 minutes. Stir occasionally.

  2. Add tomato paste and stir together. Cook for 2-3 minutes.

  3. Add tomatoes and vodka. Simmer for 6-8 minutes.

  4. Slowly stir in cream and simmer for 3-4 minutes

  5. Add Cheese, spinach, basil, red pepper flakes, and simmer for an additional 4-5 minutes.

  6. Top pasta with sauce and Enjoy!


Tip - You can absolutely freeze vodka sauce. I placed my sauce in a freezer-friendly container.
