Yield: 8 -10 Servings
Ingredients
6 slices bacon , cooked and crumbled
1 medium yellow onion , diced
2 carrots , peeled and diced
2 celery stalks , diced
2 (14.5 oz) cans low-sodium chicken broth
5 medium Yukon potatoes, diced
1/2 T of Garlic Powder
3/4 tsp dried oregano
1/2 tsp dried thyme
1 bay leaf
Salt and freshly ground black pepper , to taste
3 cups fresh corn (or frozen)
1/3 cup all-purpose flour
2 Cups of half and half
Chopped green onions or chives, for serving
Shredded Cheddar, for serving
Directions
Add all ingredients to the crockpot except half and half and the bacon.
Cook on high for 3 1/2 hours.
Stir in your half and half and cook for an additional 30 minutes.
Top with bacon, cheddar, and chives.
