Crockpot Corn & Potato Chowder






Yield: 8 -10 Servings


Ingredients

  • 6 slices bacon , cooked and crumbled

  • 1 medium yellow onion , diced

  • 2 carrots , peeled and diced

  • 2 celery stalks , diced

  • 2 (14.5 oz) cans low-sodium chicken broth

  • 5 medium Yukon potatoes, diced

  • 1/2 T of Garlic Powder

  • 3/4 tsp dried oregano

  • 1/2 tsp dried thyme

  • 1 bay leaf

  • Salt and freshly ground black pepper , to taste

  • 3 cups fresh corn (or frozen)

  • 1/3 cup all-purpose flour

  • 2 Cups of half and half

  • Chopped green onions or chives, for serving

  • Shredded Cheddar, for serving


Directions

  1. Add all ingredients to the crockpot except half and half and the bacon.

  2. Cook on high for 3 1/2 hours.

  3. Stir in your half and half and cook for an additional 30 minutes.

  4. Top with bacon, cheddar, and chives.

  5. Enjoy!
