Cornbread Casserole

I have adapted this recipe from Paula Deen's corn casserole recipe.


  • I can of kernel sweet corn, drained

  • 1 can of creamed corn

  • 1 8.5 oz box of Jiffy corn muffin mix

  • 8 oz. sour cream

  • 3 jalapenos, minced

  • ½ stick butter, melted

  • 4 oz cheddar cheese, shredded

  • A few sprinkles of smoked paprika

  • 4 slices of bacon for garnish


  1. Preheat your oven to 350 degrees.

  2. In a large bowl, combine all of your ingredients except for the cheese.

  3. Pour into a greased casserole dish or cast iron skillet.

  4. Top with cheese. Cover and and bake for 50 minutes. 

  5. Cook and crumble your bacon and placed to the side.

  6. Remove your cover and add bacon crumbles and bake until the top begins to brown.

  7. Let your casserole stand for 5-7 minutes before serving

  8. Enjoy!
