Chimichurri Chicken

Yield: 4 Servings


  • 1 ½T of Trader Joe’s Chile Lime Seasoning

  • 4 Chicken Leg quarters

  • 1/2 cup olive oil

  • 2T red wine vinegar

  • 1/2 cup of parsley, chopped finely chopped

  • 4 cloves of garlic, minced

  • 5 small dried red chilies, chopped finely

  • 1T of Fresh Oregano chopped

  • 1t of salt

  • Pepper to taste


  1. Mix all ingredients except chile lime seasoning together in a bowl. Allow to sit for at least 15 minutes.

  2. Preheat oven to 365 °F degrees.

  3. Pat dry chicken and season with chile lime seasoning.

  4. Place the chicken in cast iron skillet. A standard casserole dish works as well.

  5. Using a brush, baste the chicken with the Chimichurri. Place in the oven

  6. Cook for 65 minutes. Baste every 10-15 minutes while cooking.

  7. Increase temperature to 425°F degrees to brown the chicken for 5 minutes, or until you get the color you desire.

  8. Enjoy! Use the left over to dip the chicken in.
