Berry Lavender Sorbet

  • 4 oz of Strawberries

  • 4oz of Blueberries

  • 2oz of Raspberries

  • 1oz of Blackberries

  • 2T of Lavender sugar syrup

  • 1T of Honey

  • 2 T of Lemon juice

  • Splash of Orange Juice


Sugar Syrup

1. Combine one part of sugar and water in a saucepan with 1T Lavender and heat until the sugar dissolves. Simmer for a further 10-15 minutes until you get a sugar syrup. Pour through a strainer into a container or bottle.


  1. Cut up strawberries in slices.

  2. Freeze strawberries and other berries for a minimum of 4 hours. (I left my fruit for 24 hours)

  3. Place your fruit into a food processor or blender.

  4. Pulse to crush the fruits into small pieces and add the simple syrup, orange juice and honey a little at a time.

  5. Add a squeeze of lemon juice and mix well in a blender.

  6. Spoon it into a bowl and serve immediately or freeze until later

  7. Top with Mint when serving.
