4 oz of Strawberries
4oz of Blueberries
2oz of Raspberries
1oz of Blackberries
2T of Lavender sugar syrup
1T of Honey
2 T of Lemon juice
Splash of Orange Juice
1. Combine one part of sugar and water in a saucepan with 1T Lavender and heat until the sugar dissolves. Simmer for a further 10-15 minutes until you get a sugar syrup. Pour through a strainer into a container or bottle.
Cut up strawberries in slices.
Freeze strawberries and other berries for a minimum of 4 hours. (I left my fruit for 24 hours)
Place your fruit into a food processor or blender.
Pulse to crush the fruits into small pieces and add the simple syrup, orange juice and honey a little at a time.
Add a squeeze of lemon juice and mix well in a blender.
Spoon it into a bowl and serve immediately or freeze until later
Top with Mint when serving.
