Apple Pecan Coffee Cake





Yield: 8-10 Servings


Ingredients


1/2 cup butter, softened

1 cup sugar

2 large eggs, room temperature

1 teaspoon vanilla extract

2 cups all-purpose flour

3t baking powder

1t baking soda

1/2t nutmeg

1/2t salt

1 cup sour cream

1 cup of light brown sugar

1t cinnamon

2T cold butter

1 cup chopped pecans

1 1/4 cups chopped peeled apples


Directions


  1. Preheat oven to 350°.

  2. In a large bowl, mix butter and sugar until light and fluffy, 5-7 minutes.

  3. While butter and sugar are mixing, combine the flour, baking powder, baking soda, and salt, and set aside.

  4. Mix in eggs and vanilla. Add the flour mixture little by little. Add sour cream. Add to creamed mixture alternately with sour cream.

  5. Stir in apples and ½ cup of pecans. Pour into a greased baking dish.

  6. In a small bowl, mix brown sugar, cinnamon, butter, and remaining pecans. Cut in butter until the mixture looks like crumbs. Sprinkle over top of the batter.

  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean, 35-40 minutes.
